Astra uses the traditional WordPress Customizer for editing. Spectra One is a modern "Full Site Editing" theme that lets you build your entire website - headers, footers, everything - using WordPress's visual block editor. Yes, you'll face the same issues you'd get when switching to any new WordPress theme.
